Tonic & Gin

A classic refreshed by a blend of fresh & dry herbs in our home-made tonic.

-2 oz Aviation Gin
-1/2 oz Tonic Syrup
-4 oz Seltzer
-Squeeze of lime

Served on the rocks.

Classically, tonic is bitterly flavored with yellow cinchona bark, a preventative and cure for Malaria. Since we are not likely to suffer from such ails in the Pacific Northwest, we opt to use dandelion greens to give our tonic the crisp edge that marries so well with this bold local gin.
